Best Angel Food Cake Recipe

Ingredients

  • 1 cup cake flour
  • 1 1/2 cups sugar, divided
  • 1/4 teaspoon salt
  • 1 1/2 cups egg whites (about 10 large eggs)
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Instructions

Preheat the Oven

  • Preheat the oven to 350 degrees F (175 degrees C).

Sift the Flour and Sugar

  • In a medium bowl, sift together the cake flour, 1 cup of sugar, and salt.

Whip the Egg Whites and Cream of Tartar

  • In a large bowl, whip the egg whites and cream of tartar until stiff peaks form.
  • Gradually add the remaining 1/2 cup of sugar, while continuing to whip until stiff peaks form.

Fold in the Dry Ingredients

  • Fold in the dry ingredients, 1/4 cup at a time, until fully incorporated.
  • Fold in the extracts.

Bake the Cake

  • Pour the batter into an ungreased 10-inch tube pan.
  • Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Invert the pan onto a wire rack and cool for 1 hour.
  • Run a knife around the edges of the pan and gently remove the cake.
