Stuffed Acorn Squash Vegetarian

Ingredients

  • 2 Acorn Squash
  • 1 Onion, diced
  • 1 Red Pepper, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground Black Pepper
  • 1 cup cooked Brown Rice
  • 1/4 cup Parmesan Cheese, grated

Instructions

Preheat oven to 350°F. Cut each squash in half and scoop out the seeds. Arrange the squash halves on a baking sheet and season with salt and pepper. Roast for 25 minutes, then remove from oven and set aside.

Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and red pepper, and sauté until soft and lightly browned, about 8 minutes. Add garlic and sauté for an additional minute.

Stir in Italian seasoning, salt, and pepper. Add cooked rice and mix until everything is evenly combined. Remove from heat and stir in Parmesan cheese.

Spoon the rice mixture into the squash halves. Return to the oven and roast for an additional 15 minutes. Serve warm and enjoy!
