Ingredients for Pot Roast with Beef Consomme

  • 2 tablespoons vegetable oil
  • 3-4 pounds beef roast
  • Salt and pepper to taste
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 2 cups beef consomme
  • 1 cup red wine

  • 2 bay leaves
  • 1/4 teaspoon dried thyme

Instructions:

  • Add the onions and garlic to the pot. Cook until the onions are softened, about 5 minutes. Pour in the beef consomme, red wine, Worcestershire sauce, bay leaves, and thyme. Place the beef roast back into the pot. Add the carrots and potatoes around the roast.
  • Cover the pot and place in the preheated oven. Roast until the beef is tender, about 2 hours.
  • Remove the roast from the pot and let rest for 10 minutes before slicing. Serve with the vegetables and gravy.
