Ingredients

- 1/2 cup beef broth
- 1/2 cup tomato sauce
- 1/4 cup fresh cilantro, chopped
- 1/2 cup diced red onion
- 6 low-carb tortillas (I used Mission Carb Balance)
- 2 cups shredded cheese
- Optional toppings: diced tomatoes, diced jalapenos, diced avocado, sour cream, etc.
Instructions
- Preheat oven to 375 degrees F.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned. Drain excess fat.
- Add garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
- Add beef broth and tomato sauce. Bring to a simmer and cook for 5 minutes. Stir in cilantro and red onion.
- Spread 1/2 of the beef mixture in the bottom of a 9x13 inch baking dish.
- Top with 3 of the tortillas, overlapping as needed.
- Spread remaining beef mixture over the tortillas.
- Top with remaining 3 tortillas and sprinkle with cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
